Pastry labs
The project involves the organisation of pastry-making workshops led by Sofia Fabiani within the female correctional facility in Rome. These sessions are conceived as special moments of sharing, aimed at fostering inclusion and strengthening the connection between the outside community and incarcerated women.
Project
Across the various editions, preparations have been created in connection with key commemorations and symbolic moments of the year: mimosa muffins for International Women’s Day, cheesecake as a group workshop activity, and pastiera during the Easter period. These activities enhance Italian pastry traditions as a means of building relationships, fostering participation, and encouraging shared learning.

A graduate of Iginio Massari’s School of High Pastry, Sofia Fabiani worked as a pastry chef before embarking on an independent journey that led her to become one of the most recognisable voices in Italian culinary communication. Known online as @cucinare_stanca, she regularly collaborates with the monthly magazine Cook by Corriere della Sera and is the author of three books.
She brings to the workshop with Fondazione Severino the conviction that cooking is, above all, a language: a tool for expression and relationship which, within the prison context, also becomes an opportunity for redemption and the development of concrete skills
